Chef Peter Kuruvita launches Sri Lankan pop-up at Crown

Acclaimed chef Peter Kuruvita returns to Melbourne with a six-week culinary residency at Crown, presenting a Sri Lankan-inspired degustation menu at the Evergreen event space in Crown Towers.

Running from 19 March to 26 April, the residency, titled Serendip, will be held at Evergreen, Crown Towers’ event space, where Kuruvita will present a seven-course degustation menu inspired by his Sri Lankan heritage and coastal culinary traditions.

Created exclusively for the residency, the menu brings together Sri Lankan spices, seafood and seasonal ingredients alongside contemporary cooking techniques that have become a hallmark of Kuruvita’s style.

Among the dishes featured on the menu are Island Crisp—black kokis served with whipped curd, salmon caviar and chives—and charred sourdough with coconut sambal butter. Other courses include butter-poached crab with roasted coconut pumpkin, wild venison with crisp taro cake and spiced masala sauce, and coastal curry, which pairs crisp-skin snapper with Sri Lankan coconut curry, tamarind and a crayfish croquette.

The degustation also includes a dessert course of autumn berries with coconut yoghurt and roasted white chocolate, followed by a petit four of traditional Sri Lankan love cake served with Dilmah rose and French vanilla tea.

Kuruvita’s snapper curry, one of his most recognised dishes, also appears on the menu.

The dining experience is priced at $150 per person, with an optional $40 wine pairing featuring selections from Yalumba, including Barossa Grenache Rosé, Eden Valley Viognier and FSW Botrytis Viognier.

Guests can also upgrade selected courses, including the option to add Kaviari Kristal caviar or chargrilled butter-poached crayfish.

Serendip will run for a limited six-week period at Evergreen in Crown Towers, offering diners a Sri Lankan-inspired degustation experience during Melbourne’s autumn dining season.
