Mumbai-born chef, Rohan Desai, renowned for his culinary prowess and passion for Indian fusion cuisine, is all set to captivate the taste buds of food enthusiasts with his highly anticipated new pop-up, ‘Flavours of India.’

This gastronomic extravaganza will be hosted at the elegant Evergreen venue, nestled within the prestigious Crown Melbourne, and will run from the 6th to the 23rd of July, ensuring an unforgettable dining experience for all.

Drawing inspiration from his upbringing as an expat from Mumbai, fondly referred to as The City of Lights, Rohan’s culinary creations at ‘Flavours of India’ reflect his diverse cultural heritage.

Growing up in a household that seamlessly blended the rich culinary traditions of Maharashtra and Gujarat, he developed an unwavering passion for infusing the vibrant flavours of these regions into his dishes.

For Rohan, food is more than sustenance—it is an expression of joy, a conduit for happiness, and a means of forging connections with others.

At ‘Flavours of India,’ guests will embark on a remarkable gastronomic journey, delving into the very essence of Indian cuisine. The meticulously crafted menu showcases the best of both worlds, seamlessly blending the distinctive flavours, spices, and cooking techniques from Maharashtra and Gujarat.

Each dish is a masterpiece, meticulously prepared with a harmonious fusion of tastes, textures, and aromas that pay homage to Rohan’s roots while adding his own innovative twist.

To ensure a delightful dining experience for all, the ‘Flavours of India’ pop-up offers flexible seating options from Thursday to Sunday. Thursdays feature a single sitting at 18.30, allowing guests to savour the culinary marvels at their leisure.

Fridays and Saturdays offer two sittings, accommodating both early and late diners. The first seating commences at 17.30, providing ample time to relish the intricacies of the menu until 20.00, while the second seating starts at 20.30 and concludes at 22.30, ensuring an indulgent evening for those seeking a later dining experience. On Sundays, a lunch session at 12.30 allows patrons to embark on a flavourful journey during the daylight hours.
