Leela Subramaniam’s journey into the world of hospitality might have begun by chance, but her rise through the ranks of Melbourne’s culinary scene has been anything but accidental. Starting out as a part-time worker in hospitality while studying at university, Leela soon discovered that her true passion lay in the kitchen.
Embracing the heat and intensity of a commercial kitchen, Leela decided to trade her textbooks for a set of chef’s knives, embarking on an apprenticeship at the renowned Flinders Hotel. It didn’t take long for her to make her mark. Encouraged by her teachers, she entered a series of state and national cookery competitions, earning awards in each one. These accolades were not just wins on paper; they reflected her growth as a chef, sharpening her skills and her ability to remain composed under pressure.
The apprenticeship was a turning point for Leela, allowing her to develop the expertise and confidence necessary to excel in the culinary world. Her dedication and talent were so apparent that her head chef, a seasoned professional with 20 years of experience, promoted her to junior sous chef immediately after she completed her apprenticeship. It was a first for him—a testament to Leela’s exceptional ability and leadership qualities.
Now, as a junior sous chef, Leela plays a pivotal role in managing the kitchen, leading a team of eight during the busiest shifts. Her commitment to excellence ensures that every dish leaving the kitchen meets the highest standards, a responsibility she takes very seriously.
Leela’s ambitions extend beyond the kitchen where she currently works. She is in the final year of her Bachelor of Business degree, preparing to take her culinary skills to new heights with a self-funded stint in a Michelin Star restaurant in Europe. This experience is a stepping stone toward her ultimate goal: owning a fine dining restaurant and earning her own Chef’s Hat.
Leela’s dedication and drive have already earned her significant recognition. In 2023, she was named the Victorian Apprentice of the Year and was the Runner-up for Apprentice of the Year at the Australian Training Awards. Her career, which began almost by accident, is now on a trajectory that promises to take her to the very top of the culinary world.
