No curry in a hurry for Chef Ajoy, he wants you to savour every flavour

At Nilgiri’s, owner and chef Ajoy Joshi leads his diners into an ethnic Indian culinary journey for in his own words he is “on a mission to dispel the myth that Indian food is no more than “curry in a hurry”. He enjoys taking his diners through the nuances of Indian cooking, making it a complete food experience. Having set up Nilgiri’s in Sydney nearly 20 years ago, his passion for Indian food is seen in the culinary delight his team at the restaurant serves up for his customers.

The dining experience at Nilgiri’s includes the Tiffin Room, the weekday and the Sunday buffets and the Chef’s table. A café-style ambience at lunch and a more formal set-up at dinner create a quality dining experience that is unique to Nilgiri’s. The menu here features some popular dishes that have been given the ‘Dakhni’ twist which reflects Ajoy’s style of cooking. The Chef’s table is described as “watching a piece of theatre only better as you eat it”. Here Ajoy personally cooks an eight to ten course food extravaganza in front of you, making the whole event a special and personalised one. The weekday buffet menu changes every day, so there is always something different to look forward to and the Sunday buffet menu changes every month to celebrate a different festival.

Ajoy Joshi who was trained in Chennai, and started his career at the prestigious Taj Group of Hotels, has many feathers in his chef’s ‘hat’. In 30 years as a ‘practising’ chef, he has appeared on numerous television and radio programmes and is respected as one of Australia’s top Indian chefs. He is regarded as an authority on Indian food, both overseas and in Australia, where he is frequently asked to advise cookery schools and hotels. He has published cookery books and won several awards as well.

Ajoy has organised many activities that have allowed him to share his passion and knowledgeof Indian food with food enthusiasts – its correct preparation, sourcing the best ingredients and passing on culinary facts that he is always happy to share. Ajoy’s Dinner demonstration is an hour long unique dining experience where he demonstrates how to cook a complete dish and an accompaniment. And then of course taste it too! The cooking classes at Nilgiri’s introduces the students to the pleasures of preparing Indian food where they learn all about Indian spices and the culture, thus dispelling some of the myths about Indian cooking. Nilgiri’s is indeed a one-stop shop for everything culinary.
